Restaurant-Style Mushrooms On Toast

Slice the mushrooms, but not too thin. You want to brown them and get some nice colour on them, so you don’t want them to shrivel up. At this stage, you should also peel the garlic and onions and dice them as thin as you can. Pick the thyme leaves from the stalks.
You can grill the bread in a chargrill pan, use the grill or toast the slices. All work just as well for this recipe.
Heat up the pan to a high temperature. The hotter the better! Add the sliced mushrooms so that they are all touching the surface of the pan, as you want to brown them evenly.
After flipping and getting that wonderful golden brown colour, add in the garlic, onions and thyme. You will need to keep everything tossed at this stage, so that the garlic or onion doesn’t burn.
After another minute, add a couple of knobs of butter. This is where you will get the lovely, golden brown nutty flavour from the mushrooms. Keep cooking until the mushrooms are a rich golden brown.
Season with salt.
And a lot of cracked black pepper.
At the very last moment, finish the dish with a good handful of finely chopped parsley.
Serve up immediately, with some of the cooking liquid spooned around the dish.
