For those times that you need a simple recipe that is affordable, quick and can feed a group, this is where our chicken drumstick one pot wonder comes in. Plus, with hardly any washing up to do, you will quickly realise you are onto a winner with this one.
This is the latest in our series of tasty recipes that feature just 7 simple ingredients. They are all super tasty and can be made by people of any cooking ability.
The chicken drumsticks are a cheaper cut of meat yet they have way more flavour than the breast. The natural juices that they release along with the fragrant spices and lemon make this a home-run of a dish.
Chicken Drumstick One Pot Wonder: Ingredients
- Chicken drumsticks
- Spinach
- Rice
- Garlic
- Turmeric
- Paprika
- Small plum tomatoes
- Lemon
- Onion
Season the drumsticks with salt and pepper and rub them with some olive oil. Sear the skin off in a large pan.
While the chicken is cooking, get the zest of the lemon. Do this using a grater to remove the yellow part of the lemon’s skin.
Quarter the lemons and slice the onions as fine as you can. You should also peel and slice the garlic. All these wonderful flavours will bring the dish to life!
When the chicken has browned off on the outside, start adding in the flavourings. Cook them off over a medium heat and keep stirred using a wooden spoon or spatula for 2-3 minutes.
Turn the heat right down to a low temperature and add in the rice. Cook the rice for 30 seconds so that it absorbs all the wonderful flavours.
Add in the quartered lemons.
Top the pan up with water. It should cover the rice by about an inch. At this stage you should have the pan on a very low temperature.
Good things come to those who wait.
When the pot starts simmering and heating up, cover it with a lid. This will help seal in all the flavours.
After about 15 minutes cooking, add in the halved tomatoes. Cook for a further 10 minutes.
Taste the rice to make sure it is soft and cooked through. At this stage, add in the spinach and stir everything together. The spinach will just wilt naturally.
The real beauty of this dish is that you can serve it at the table family-style. Just pop the frying pan onto a wooden chopping board and let people help themselves.
