dishes are diverse and delicious, with ingredients taken from its three geographic regions: the Amazon, the Andes, and the Pacific coast.

The Amazon produces exotic fruits and unusual proteins, with banana and yucca a real staple. In the highland (Andes) region, you’ll find lots of potatoes, cheese, corn, avocados and hornandos—whole roasted pigs. And then on the coast, there’s bountiful fish and seafood, resulting in fresh ceviche.

You’ll find a lot of soups here, fried plantains and potato fritters and tender grilled meats. While nothing can beat the street food across Ecuador, you can try your hand at recreating some of the country’s most iconic dishes at home.

Llapingacho are basically mashed potatoes formed into a patty shape, stuffed with cheese and then cooked up on a pan until golden brown. They are often served with salsa.
