Want to cook a home brunch this weekend? This chilli beef with eggs that’s all cooked up in just one pan is ideal It’s similar to our 7 Ingredient Cheat Shakshuka Recipe, but with a lot more meaty goodness.
This is the latest in our series of tasty recipes that feature just 7 simple ingredients. They are all super tasty and can be made by people of any cooking ability.
The real beauty here is that one big pot will make enough for the whole family or a group of friends. Less cleaning up = win-win! We ate ours with toasted tortilla chips, but any type of bread or crackers would work just as well for dipping.
Chilli Beef With Eggs – Ingredients
- Tinned kidney beans
- Tinned chopped tomatoes
- Minced (ground) beef
- Onions
- Garlic
- Paprika (replace with chilli powder for extra heat)
- Eggs
Peel and dice up the onions as fine as you can.
Heat a large pan up and sweat off the garlic and onions over a low to medium heat. This will take a couple of minutes to draw the flavour out of them. The key is cooking them without any browning or colour.
Add the beef in and raise the temperature. You want to brown it off while using a spatula or wooden spoon to break any lumps out of it. When it takes on a nice brown colour, add the paprika and cook for a further minute. Next, add the chopped tomatoes and turn down the heat.
Cook the mixture for about 20 minutes until you get a deep, red and rich tomato sauce. Next, add the kidney beans, which should be strained and rinsed beforehand.
When you’re happy with the flavour of your sauce, crack the eggs directly into the meat. You can make little ‘pockets’ of space for them by pushing the meat to one side in the pan. You will see them cooking as the heat rises. There is no need for the oven here! The process shouldn’t take much longer than 3-4 minutes.
Finish with something green on top for a splash of colour (we used cress, but it could be anything from parsley to rocket). The green is only for appearance’s sake though, as the dish will be tasty enough as is.
