Dice the red onions and chillies as fine as you can. If you like it especially hot, leave the seeds in the chillies for extra heat!
Peel the garlic and thinly slice it. Next, add coarse salt to it and use the back of the knife to crush it. This will turn the garlic into a paste.
Add all those ingredients to a large bowl, along with the chopped coriander.
Quarter the tomatoes and remove the seeds from the centre to leave you with just the pure flesh of the tomatoes. You’ll be using the juicy skin pieces for the salsa.
Chop them up as small as you can, using a large sharp knife. Keep chopping for a good 2-3 minutes until you create a nearly smooth tomato paste.
Add the mashed tomatoes to the rest of the salsa ingredients.
Squeeze in lots of fresh lime juice and season with salt and pepper to taste.
Combine the mixture and taste to see if it needs more chill, lime or seasoning, based on your preferred taste.
You can make the salsa in advance and store it for a later date, as it only gains in flavour as time goes on and the ingredients mingle.
Make sure to get the best quality corn chips you can. The crunchy bite with the zingy homemade tomato salsa is an absolute game changer.
