10 Minute Ginger Fried Pork With Crispy Veg
If you are looking for a super simple recipe that is low in carbs, tasty and quick to make, then this ginger fried pork is the one for you. You could team it up with rice or noodles, but it’s also just as tasty eaten on its own.
This is latest in our series of recipes that feature just 7 ingredients and can be made in less than 30 minutes. It’s the sort of dish that once you learn how to make, you will always keep coming back to it.
It also helps that the pork fillet is a super affordable, yet often neglected, cut of meat. You can also add more ingredients (chilli or other veg) to the recipe – throw in whatever is in the fridge!
Peel and slice the carrots, ginger and garlic as thin as you possibly can. This may take a little bit of time if you are new to chopping, but it will be worth it.
Also slice up the yellow peppers and cut the sugar snap peas at an angle.
In a large frying pan or wok, fry the garlic and carrots off over a medium to high heat. You will want to keep them moving at all times so the garlic doesn’t burn. This should take about 1-2 minutes maximum.
Next, add in the pork which you should season with salt and pepper in advance.
Cook the pork until it starts to take on some colour, before adding the yellow peppers.
Cook for another minute until the peppers start to soften, before adding the soy sauce. Let this quickly steam off and coat all the ingredients.
At the very last moment, add in the sugar snap peas. You want to keep these super crunchy, so barely cook them for 10 seconds before whipping the pan off the heat.
Serve the dish up immediately.
