Spend an evening snorkelling at the reefs by the 50 m-long Coral Coast.

To get a taste of authentic Fijian cuisine, go for a lovo, a feast prepared by wrapping meat and vegetables in banana leaves, placing the bundle into a hole dug into the ground, and slow-cooking them over hot stones for several hours. For fans of ceviche, you’ll like kokoda - a dish consisting of raw fish marinated in lemon or lime juice and tossed with fresh red onions, tomatoes, capsicums and coconut milk. The most common type of fish used in kokoda is mahi mahi, which you can try plainly grilled too. For a hearty side dish, opt for rourou, a stew made with coconut milk and taro leaves. Oh, and while you’re in the Suva city markets, taste some kava, Fiji’s national drink, a tribal beverage that is said to soothe your tongue into total numbness.
